Complex Blend of Multiple Fermentations
A collaboration with Wine 101, American wild ale aged in Red Zin Wine barrels with Brett and Blueberries. Part of the wort went through a kettle souring with lacto, before finishing out the fermentation with a French saison yeast strain. The other half of the wort went through a 100% Brett fermentation using a house culture that the brewery has been developing over the past year. The two batches were blended together into Red Zin barrels from Biale Vineyards and aged with blueberries for 3 months.
